Simple Wheat Free Healthy Bread

Ingredients:

2 cups plain full fat yogurt, preferably Bulgarian sheep yogurt

1 1/2 cups coconut flour

1/2 cup psyllium husk

2 teaspoons baking powder

1/2 teaspoon sea salt

Optional: 1 tablespoon olive oil for a softer crumb

Egg yolk and seeds of choice for topping

Instructions:

1. Preheat your oven to 180°C.

2. Line a small loaf tin with baking paper or lightly grease it.

3. In a large bowl, mix the coconut flour, psyllium husk, baking powder, and sea salt until evenly combined.

4. Add the yogurt and olive oil if using.

5. Stir gently until a thick dough forms. Do not overmix.

6. Spoon the dough into the loaf tin and smooth the top.

7. Brush with egg yolk and sprinkle with seeds of choice.

8. Bake for 35 to 45 minutes at 180°C until golden and a knife inserted into the centre comes out clean.

9. Allow to cool for at least 15 minutes before slicing.
